How To Make Best Peanut Butter Cookies?

Step 1: Sift And Mix

First of all, take a large mixing bowl and sift flour and baking powder together then use a whisk to combine thoroughly.

Step 2: Cream The Butter And Sugars, Add PB

Next in a stand mixer fitted with a paddle attachment add the butter and both the sugars, mix until creamed. This will take about 3-4 minutes. Add an optional 1/4-1/2 teaspoon of sea salt. When creamed add peanut butter to the mixture and mix until fully incorporated.

Step 3: Add The Egg And Dry Ingredients

Once the peanut butter is completely mixed, add the egg and vanilla extract. Finally, add flour mixture ½ at a time and beat until incorporated. The dough will be thick and soft to touch.

Step 4: Cover And Chill

Cover and chill the dough for about an hour in the refrigerator (and can be stored up to 2-3 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before rolling and baking as the dough will be quite hard to mould.

Step 5: Pre-Heat Oven And Roll The Dough

Preheat over to 350F, keep the kids out of the kitchen at this point and observe caution. For the next step roll dough into balls, take about 1.5 tablespoons or one scoop of dough per ball. Roll the balls in a mix of granulated and brown sugar (1 tablespoon of each will do). Place these on baking sheets lined with parchment paper.

Step 6: Flatten And Bake

Using a fork flatten the cookies in a crisscross pattern on top of each. Bake cookies for about 10-12 minutes. Or until very lightly browned off the sides and the canters will look extremely soft. Allow cookies to cool partially on the baking sheet for 20 minutes, they need to set up before being transferred. Transfer to a wire rack to cool completely.

We top our cookies with marshmallows as the kids love the melt in the mouth treat, add them to the top of the flatten cookies and broil for 30 seconds, it’ll melt on top.

What Kind Of Peanut Butter And Brown Sugar To Use For The Best Peanut Butter Cookies Recipe?

We prefer using creamy peanut butter, you can use chunky peanut butter as well if you like a bit of texture on your cookies. Add a tad bit extra if using chunky peanut butter just to enhance the flavours and get the most out of it. Here are a few brands you can try for the best peanut butter cookies outcome, for creamy use either Happy Belly, Jif, or Skippy. For crunchy use Skippy, Happy Belly, or Jif.

Now coming on to Brown Sugar, we in our recipe are using light brown sugar but if you like and want a deep caramel flavour you can use dark brown sugar as well. Both types of brown sugars will yield the best peanut butter cookies.

If you don’t have a measuring scale you can simply overfill your measuring cup loosely and level it off using a knife. So just remember guys, follow the recipe exactly as it is and please try not to mess up the measurements because even a hint of excess ingredients can change a lot in a recipe’s flavour and texture.
