How To Make The Best Vanilla Ice Cream?

Step 1: Make The Custard Base

To start take a medium saucepan on a medium-low flame and add yolks and sugar to it. Whisk this until the yolks turn a light yellowish colour and the sugar and yolks are well combined. Remove from the flame.

In a separate saucepan pour the milk and heat over a medium flame, keep it on until it just begins to simmer. Do not stir the milk, remove once done.

Now slowly and gradually, add the hot milk to the yolk mixture and stir constantly using a hand whisk. Return the custard mix to the stove on low heat and heat until the temperature reaches 165º F, remove from heat once reached. Don’t let the mixture come to a boil, keep a close watch!

Step 2: Chill The Custard

Pour the custard base in an airtight container and chill in the refrigerator for about 30 minutes or until chilled completely. The longer you let the base cool down the creamier the ice cream will be.

Step 3: Mix In The Heavy Cream, Vanilla Extract And Process It

When chilled take it out and transfer it to a large mixing bowl. Mix in the heavy cream and vanilla extract. Pour the ice cream mix into the ice cream processor and process according to the instructions of your ice cream processor.

Step 4: Freeze, Serve And Enjoy
