For Cream Cheese Frosting
- 8 ounces cream cheese (softened to room temperature)
- 3 cups confectioners’ sugar
- 1/2 cup unsalted butter (softened to room temperature)
- 1 teaspoon pure vanilla extract
- Pinch of salt

How To Make These Pumpkin Spice Muffins?
Start the process by preheating your oven at 325℉ or 165℃. Grease all the 12 cups of your muffin tray with butter or non-stick cooking spray to prevent your muffins from sticking to it.
Then, in a large bowl, beat oil and maple syrup/honey together using a whisk, then add the eggs and beat them well! Add the milk, pumpkin spice blend, pumpkin purée, baking soda, vanilla extract and salt.
Add the flour and oats to the bowl as well and mix well with a large spoon just till it’s properly combined. You can also add the extra ingredients of your choice considering the variations that you would like to pull off.
Now divide the batter evenly between the muffin cups, and sprinkle the tops of the muffins with about a tablespoon of oats and a light sprinkle of raw sugar and pumpkin spice as well if you would prefer.
Bake the muffins for 22-25 minutes or use the good old toothpick method and stick the toothpick in, then pull it out, if it comes out clean then your muffins are ready!
After that, place all the muffins onto a cooling rack to cool at room temperature. Be careful not to damage them because while the muffins are still hot, they will be really delicate and might break.
You might need to use a butter knife to loosen them from the pan but it is highly unlikely that they’ll stick if you had greased the pans properly.

For a homemade pumpkin spice blend, simply mix up, 1 teaspoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ¼ teaspoon ground allspice or cloves. You can even take the whole form of these ingredients and grind them up in a spice grinder!
Oil Alternatives
We use coconut oil for our pumpkin spice muffins and we cannot even taste the coconut so that won’t be a problem! But you can use vegetable oil or canola oil in place of coconut. Slight warning these oils are highly processed. You can even use olive oil to give your muffins a slightly herbal touch.
Flour Options
We are using gluten-free whole wheat flour; it yields a light and fluffy muffin. To mix things up you can use white whole wheat flour or whole wheat pastry flour. The recipe can also be made using all-purpose flour. As said before its an easy recipe and you can mix things up according to your preference.
Make It Oat Free And Low In Fat

It is fairly simple to make cream cheese frosting, firstly you need a large bowl with a handheld or a stand mixer that has a whisk attachment to beat the cream cheese with butter. Beat both the ingredients at a high speed to infuse properly until smooth and creamy!
Add sugar, vanilla and salt, beat on a low speed for about 30 seconds and then switch to a high speed and beat for 2 minutes until all ingredients are fully combined. Keep mixing if you want the cream cheese frosting to be thicker but the time, we gave you is enough for the right consistency.
