Why We Claim These To Be The Best Pumpkin Spice Muffins

We deliver exactly as we claim, and we claim that our recipe is the best pumpkin spice muffins recipe there is because it being so easy and has easy to find ingredients. It does not create a mess in the kitchen as it only needs ONE LARGE BOWL, so you don’t have to worry about doing the dishes later.

Our muffins are delicious but are healthy too as they’re made with 100% whole grains and still have that yummy fluffy texture that everyone loves. There is no sugar added which is harmful to your health, we used maple syrup/honey in our recipe for sweetness which gives a much richer flavour.

The muffins contain the few warming spices that add that contrast to the sweetness and make them taste 100 times better! Lastly, these muffins are easy to store and last long in storage; however, we highly doubt you’re going to leave any once you start eating. HAVE FUN! pumpkin spice ingredients

How To Make These Pumpkin Spice Muffins?

Start the process by preheating your oven at 325℉ or 165℃. Grease all the 12 cups of your muffin tray with butter or non-stick cooking spray to prevent your muffins from sticking to it.

Then, in a large bowl, beat oil and maple syrup/honey together using a whisk, then add the eggs and beat them well! Add the milk, pumpkin spice blend, pumpkin purée, baking soda, vanilla extract and salt.

Add the flour and oats to the bowl as well and mix well with a large spoon just till it’s properly combined. You can also add the extra ingredients of your choice considering the variations that you would like to pull off.

Now divide the batter evenly between the muffin cups, and sprinkle the tops of the muffins with about a tablespoon of oats and a light sprinkle of raw sugar and pumpkin spice as well if you would prefer.

Bake the muffins for 22-25 minutes or use the good old toothpick method and stick the toothpick in, then pull it out, if it comes out clean then your muffins are ready!

After that, place all the muffins onto a cooling rack to cool at room temperature. Be careful not to damage them because while the muffins are still hot, they will be really delicate and might break.

You might need to use a butter knife to loosen them from the pan but it is highly unlikely that they’ll stick if you had greased the pans properly.

These muffins taste much better once they have cooled down properly for 2 hours at room temperature. Enjoy!

Ingredient Substitutes

Homemade Pumpkin Spice Blend

For a homemade pumpkin spice blend, simply mix up, 1 teaspoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ¼ teaspoon ground allspice or cloves. You can even take the whole form of these ingredients and grind them up in a spice grinder!

Oil Alternatives

We use coconut oil for our pumpkin spice muffins and we cannot even taste the coconut so that won’t be a problem! But you can use vegetable oil or canola oil in place of coconut. Slight warning these oils are highly processed. You can even use olive oil to give your muffins a slightly herbal touch.

Flour Options

We are using gluten-free whole wheat flour; it yields a light and fluffy muffin. To mix things up you can use white whole wheat flour or whole wheat pastry flour. The recipe can also be made using all-purpose flour. As said before its an easy recipe and you can mix things up according to your preference.

Make It Oat Free And Low In Fat

Before suggesting any changes, I’ll admit these pumpkin spice cupcakes do contain fats. To reduce this, you can simply replace oil with applesauce. To make it oat free, just omit the oats!

Cream Cheese Frosting For Your Pumpkin Spice Muffins

Why only add cream cheese frosting? The reason cream cheese frosting is used on muffins is that it is easy to make and the biggest reason is that it does not overpower the pumpkin flavour in the muffins and hence gives a great balance in return!

It is fairly simple to make cream cheese frosting, firstly you need a large bowl with a handheld or a stand mixer that has a whisk attachment to beat the cream cheese with butter. Beat both the ingredients at a high speed to infuse properly until smooth and creamy!

Add sugar, vanilla and salt, beat on a low speed for about 30 seconds and then switch to a high speed and beat for 2 minutes until all ingredients are fully combined. Keep mixing if you want the cream cheese frosting to be thicker but the time, we gave you is enough for the right consistency.

How To Store Pumpkin Spice Muffins?

These pumpkin spice muffins with walnuts can last for about 4 days in an airtight container. Line an airtight container with a paper towel and place your muffins on top, seal off the container and place it anywhere that is at the perfect room temperature. Your muffins should remain fluffy and good for around 4 days!

But if you want to store your muffins for longer then you need to freeze them in an airtight container and place the container in your freezer. The muffins will freeze and they’ll have a prolonged life of around 2 months.
