Making The Crust

  • To make the crust, grab a large bowl and mix the all-purpose flour and salt. Then add cubes of butter in and mix well until it is fully combined.
  • Use your hands and knead the mixture until it gains a proper dough form. Once in dough form, divide the dough into two portions (one should be slightly larger than the other), then place both the doughs on separate cling sheets and press them into disks.
  • Wrap them in plastic and refrigerate them for 2 hours or overnight.

Making The Mixed Berry Pie Filling

  • In a large saucepan, whisk sugar, cornstarch, salt, water and some cinnamon (optional) until a smooth mixture forms.
  • Add in some fresh blueberries and let the mixture boil, then cook and stir it for 2 minutes until it reduces and thickens at a medium flame. Let it cool down for a while before you get to the next step.
  • Preheat your oven to about 400℉ and while that heats up, add, start gently folding strawberries, blackberries, and lemon juice into the blueberry mixture.
  • Then, lightly flour a surface, roll out the larger portion of the dough to a 1/8-inch-thick circle and transfer it to a 9-inch pie plate and trim the edges of the crust ½ inches beyond the rim of the plate.
  • Next, add the filling and dot with butter.

Make The Lattice Pattern

  • Grab the other dough, and cut it into a 1/8-inch-thick circle.
  • Then cut ½ inch wide strips and arrange over the filling in a lattice pattern; trim the edges of the strips, then stick them to the edge of the base pastry.
  • Bake for 10 minutes.
  • Lastly, reduce the oven setting to 350℉ and bake for 40-45 minutes and keep a close eye for the crust to turn golden brown in colour and the filling is all bubbly and hot. Pull it out of the oven and cool it down on a wire rack.


Tips For Best Outcomes

Let the dough rest:

When making the pastry, it is essential to let it rest in the refrigerator as this allows it to expand accordingly and will enhance the texture of the overall crust at the end. Always keep in mind, to get the best textures and flavours, always let your ingredients rest and do not exhaust them.

Do not over-knead:

If you over-knead the dough, it will not retain its desired form. Over-kneading the dough will cause it to lose its airy texture at the end and will not be good for your pie.

Use fresh ingredients:

Always use fresh ingredients, especially when it comes to baking a pie. Using fresh fruits is essential to get the right flavours and making your pie stand out from the rest. You obviously can use frozen berries, but we do not recommend that as it takes away freshness.

Do not overbake:

Overbaking is the last thing you would want to do to your yummy pie. We mentioned keeping a close eye on your pie while it’s baking in the oven. Once it turns golden brown, it means it’s done. No one likes overbaked pastry because it gets crumbly and dry.

This is a fairly time-consuming recipe and requires focus. To make it right on your first try, follow the recipe exactly as it is and try your best to make every measurement on point, focus on every component and do not underestimate anything!

Storing Tips For The Mixed Berry Pie Recipe

Storing your mixed berry pie isn’t a difficult job; if your pie is not sliced, it can survive in your refrigerator for 2 days covered in plastic wrap or sealed in an airtight container.
However, if you have sliced your pie, the slices need to be placed in an airtight container as well or covered with some plastic wrap. The slices will stay good for a day in the fridge, but we highly recommend consuming them as soon as possible.
